Pintxos are presented in every bar in San Sebastian’s famed old town, but knowing where to find the best ones is an art. We dive straight into the culinary heart of thecity for a night of eating and drinking unlike any you’ve ever experienced. From fresh prawns to line-caught baby squids to perfectly charred steak, the pintxo hunt changes nightly but always features a range of traditional spots and chic, avant-garde bars. Come thirsty too, as we will be pairing each pintxo with the perfect pour, from cider to local white and red wines.
Overnight at the hotel in San Sebastian. Some typical tapas are:
STUFFED MUSSELS (TIGRES)
This Spanish dish is often served as a tapa with a spicy tomato and anchovy sauce which has led to the dish becoming known as ‘tigres’, because they are fiery in their taste. The mussels are steamed and the chopped mussels are mixed with lightly caramelized onions, a dollop of fried tomato sauce and sweet and spicy paprika. The shells are filled with this mixture, covered with béchamel, brewed and fried. The filling is crispy on the outside and creamy in the centre.
GILDA
Gilda means lollipop, and the classic gilda is a simple assembly of a guindilla (Spanish chili pepper), an anchovy and an olive. The combination of good-quality pinkish anchovies, smallish and crisp, unwrinkled chillies and a freshly pitted olive produces a sophisticated mélange.
CHATKA
Chatka is a seafood cream mixed with mayonnaise and is a very famous Basque topping for the classic pintxos you’ll find in this region.
EMPANADAS
This tasty Spanish pies filled with meat, tuna, vegetables, chicken and many other options is something you can’t leave without trying!
BACALAO AL PIL PIL
Bacalao al pil pil is a traditional dish from the Basque country. It is well known all over Spain and popular with Spaniards and tourists alike. It is made with salt cod, garlic, guindilla chilies and olive oil.
